    This healthy chili is one you’ll want to make up in batches and keep on hand all winter long! Freezer Meal Sweet Potato Chili is sweet, spicy and delicious and so simple to make.

    Sweet Potato Chili is a spicy and filling meal, perfect for a fall or winter evening. It's easy to prep because there is no pre-cooking required. Simply chop, open cans, and add ingredients to a freezer bag for a quick and easy meal that will be on hand in the freezer for those busy nights.

     

    Sweet Potato Chili is a perfect for an evening when you want a meat-free meal. It can also be made ahead of time, frozen, and cooked in the slow cooker when you find yourself on a health-kick or serving guest who prefer a vegetarian lifestyle--simply swap the chicken broth for vegetable broth.

     

    Besides being so easy to make, Sweet Potato Chili has several health benefits. Sweet potatoes are one of the tastiest superfoods nature has to offer! They're high in fiber and are a very good source of vitamin A in the form of beta carotene. Beta carotene is an anti-oxidant that has been shown to improve eyesight.

    Ingredients You'll Need To Make Freezer Meal Sweet Potato Chili:

    • red onion
    • jarred minced garlic
    • jalapeno peppers
    • sweet potatoes
    • black beans
    • ancho chili powder
    • chili powder
    • chipotle chili powder
    • cumin
    • salt
    • fire-roasted diced tomatoes
    • crushed fire-roasted tomatoes
    • chicken broth or sub vegetable broth

    How To Make Freezer Meal Sweet Potato Chili In A Slow Cooker:

    1. Add all ingredients to freezer bag and shake to combine.
    2. Remove air and seal
    3. Freeze for up to 3 months
    4. Thaw overnight in fridge before cooking
    5. Add thawed ingredients to slow cooker and cook on high for 3-4 hour or low for 6-8 until potatoes tender

    Pro Tips:

    Serve Sweet Potato Chili topped with cheese, sour cream, crushed chips, and chopped cilantro for a hearty, filling meal. It's also delicious served without any toppings.

    Want your Sweet Potato Chili to be less spicy? All you have to do is reduce or eliminate the chipotle powder.

     

    By adding other veggies (bell peppers, etc.) you can increase Sweet Potato Chili's nutritional value.

    Ingredients
      

    • 2 oz diced red onion minced
    • 1 teaspoon jarred minced garlic
    • 2 jalapeno peppers ribs and seeds removed, diced
    • 1 pound sweet potatoes peeled and diced into bite sized pieces
    • 14 oz can black beans drained and rinsed
    • 2 teaspoons ancho chili powder
    • 2 teaspoons chili powder
    • ¼ teaspoon chipotle chili powder
    • 1 teaspoon cumin
    • 1 teaspoon salt
    • 14 oz fire-roasted diced tomatoes
    • 28 oz crushed fire-roasted tomatoes
    • 1 cup chicken broth or sub vegetable broth

    Instructions
     

    • Add all ingredients to freezer bag and shake to combine.
    • Remove air and seal
    • Freeze for up to 3 months
    • Thaw overnight in fridge before cooking
    • Add thawed ingredients to slow cooker and cook on high for 3-4 hour or low for 6-8 until potatoes tender

    Notes

    • Can reduce or eliminate chipotle powder to make less spicy
    • Add other veggies if desired (bell peppers would be delicious)
