What’s To Love About This Recipe

  • Greek chicken is usually prepared hours in advance with a marinade, and then either grilled, baked, or roasted. While these methods do result in a tasty dish, you have to plan ahead to let it marinate long enough! With the slow cooker, you can skip the time waiting for a marinade, prep the ingredients for the slow cooker, and get straight to cooking!
  • The slow cooker is just as effective as a marinade (if not more) in sealing flavor and preserving the juiciness of tender chicken. 
  • This isn’t your basic chicken slow cooker recipe! The extra veggies, olives, and shallots complement the chicken with complex flavors, and you’ll want to scoop every last bit from your bowl.
  • Slow Cooker Greek Chicken is a fabulous main dish to serve with pita bread, rice, noodles, potatoes, or orzo.

Ingredients Needed  

  • Olive oil – Lightly brown the chicken with a bit of olive oil in a skillet.
  • Chicken – I used boneless skinless chicken breast. You could substitute boneless thighs for breasts if preferred, or use a combination of the two – just be sure to use a boneless cut to prevent added grease.
  • Greek seasoning – Many Mediterranean dishes use generous amounts of seasoning including oregano, dill, parsley, marjoram, and thyme. A seasoning blend is a simple option and you can use your favorite brand or mix your own.
  • Garlic – Jarred minced garlic is the best option for simple slow cooker prep.
  • Shallot – A shallot is a slightly sweet onion variety with a purple tint. Peel it and thinly slice it across the onion layers.
  • Roasted red peppers – A 12-ounce jar of peppers provides a delicious smoky sweet flavor. Drain the peppers so you don’t add extra oil to the slow cooker. 
  • Kalamata olives – Kalamata olives are a staple in Mediterranean cooking. They have a tangy flavor and deep purple color. Make sure to use pitted olives!
  • Sun-dried tomatoes – Find these either packaged in a jar with oil or dry in a sealed bag. If you choose the jarred variety, scoop out the tomatoes, leaving the oil mixture out.
  • White wine – Choose your favorite white wine – a dry variety such as Chardonnay or Sauvignon Blanc would work well.
  • Fresh lemon slices, fresh herbs, and goat cheese all make excellent choices to garnish the dish!

How To Make Greek Chicken In The Slow Cooker

  1. Heat oil in a skillet over medium-high heat.
  2. Sprinkle seasoning evenly over the chicken.
  3. Add chicken to the skillet and cook for 3-4 minutes on each side until just browned but not cooked through.
  1. Transfer the chicken to the slow cooker and add garlic, shallot, peppers, olives, and tomatoes.
  2. Add wine to the slow cooker.

  1. Cover and cook on high for 3-4 hours or low for 6-8 hours.
  2. Garnish servings with a squeeze of fresh lemon, fresh chopped herbs, and crumbled goat cheese.

NOTE
  • Browning the chicken isn’t absolutely necessary, but it will yield a better result in terms of texture and appearance.

Recipe Substitutions and Variations

  • Any boneless chicken cut can work for this recipe.
  • White wine adds acidity and complexity to the flavor of the Greek chicken. However, If you prefer not to use wine, you can substitute it for chicken broth.
  • If you can’t find shallot from your grocery store, you can substitute finely sliced red onion.
  • If you like green capers, add a spoonful to the slow cooker!

How To Serve Greek Chicken 

Slow Cooker Greek Chicken is such a delicious main dish that it can be served with many different sides. Pair it with basmati or yellow rice, or create a sandwich by slicing the chicken and adding it with veggies into a pita wrap. You could also let the Greek chicken cool slightly and serve it over a bowl of salad greens.

  • Should you brown the chicken before putting it in the slow cooker? Browning the chicken is not crucial to the recipe since it will thoroughly cook in the slow cooker. However, it does create a nice outer texture – especially for slicing the meat – and is more visually appealing.
  • How do you prevent the chicken from drying out in the slow cooker? All slow cookers have slightly different temperature settings, so the best way to prevent chicken from drying out is by cooking it on the low setting instead of high. Also, after the chicken is fully cooked, be sure to either turn the slow cooker off or to the keep warm setting until ready to serve.
  • Can Greek Chicken be made in the Instant Pot? To make Greek chicken in the Instant Pot, simply add all ingredients plus ½ cup chicken broth to the pot. Seal and set it to cook on high pressure for 10 minutes and allow a natural steam release.

    1. I have not tested this with any other cooking methods but I think you could continue it in the skillet until the chicken is done and layer in the remaining ingredients? Let us know if you give it a try!

  1. I am sure I can guess at how many ounces of roasted red peppers to use, but if you could post the size you used I would love it. I also wonder when you added the red onions that are shown in the photos? Halfway through cooking? Sauté separately?

    1. A 12 oz jar of red peppers will work for this recipe. The onions you see are the shallots listed in the recipe! I hope you enjoy and please let me know how it turns out!
