2 tablespoons olive oil 1 1/2 pounds boneless skinless chicken breast 1 tablespoon Greek seasoning blend 1 tablespoon jarred minced garlic 1 shallot peeled and sliced 12 oz. jar roasted red peppers drained 1/2 cup kalamata olives 1/2 cup sun-dried tomatoes 1/4 cup white wine fresh lemon, herbs, and goat cheese for garnish

Heat oil in skillet over medium-high heat
Sprinkle seasoning evenly over chicken
Add chicken to skillet and cook for 3-4 minutes on each side until just browned, but not cooked through
Transfer chicken to slow cooker and add garlic, shallot, peppers, olives, and tomatoes
Add wine to slow cooker
Cover and cook on high for 3-4 hours or low for 6-8 hours
Garnish servings with a squeeze of fresh lemon, fresh chopped herbs, and crumbled goat cheese
Store leftovers in the fridge for up to 3 days in a sealed container and reheat in the microwave or in a skillet.
If you prefer to leave out the wine, use chicken broth instead.
If possible, cook chicken breasts on the low setting to prevent any dryness or toughness.
