Slow Cooker Greek Chicken

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 pounds boneless skinless chicken breast
  • 1 tablespoon Greek seasoning blend
  • 1 tablespoon jarred minced garlic
  • 1 shallot peeled and sliced
  • 12 oz. jar roasted red peppers drained
  • 1/2 cup kalamata olives
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup white wine
  • fresh lemon, herbs, and goat cheese for garnish

Instructions

  • Heat oil in skillet over medium-high heat
  • Sprinkle seasoning evenly over chicken
  • Add chicken to skillet and cook for 3-4 minutes on each side until just browned, but not cooked through
  • Transfer chicken to slow cooker and add garlic, shallot, peppers, olives, and tomatoes
  • Add wine to slow cooker
  • Cover and cook on high for 3-4 hours or low for 6-8 hours
  • Garnish servings with a squeeze of fresh lemon, fresh chopped herbs, and crumbled goat cheese

Notes

  • Store leftovers in the fridge for up to 3 days in a sealed container and reheat in the microwave or in a skillet.
  • If you prefer to leave out the wine, use chicken broth instead.
  • If possible, cook chicken breasts on the low setting to prevent any dryness or toughness.
