How To Make Slow Cooker Cowboy Stew

  1. In a skillet over medium heat, brown the ground beef until no longer pink, then drain excess grease if needed.

  1. Add ground beef, smoked sausage, beans, corn, potatoes, fire-roasted tomatoes, tomatoes with green chilies, beef broth, and chili seasoning to a 6-quart slow cooker, and stir well.

  1. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes (if using fresh) are tender and flavors are blended.
  2. Stir, taste, and adjust seasoning if needed before serving.

  • Browning the ground beef first enhances the stew’s flavor and texture. Use a lean version and drain excess grease as needed.
  • For a thicker broth, mash some of the beans or potatoes, or reduce the amount of liquid slightly.
  • Customize with toppings like shredded cheddar cheese, sour cream, sliced jalapeños, green onions, or tortilla chips.
  • Prepare the stew ahead of cooking and let it sit in the fridge for up to 24 hours so the flavors will deepen. You can leave the ground beef out until assembly, or else be sure that it has completely cooled before adding it to the other ingredients in the fridge.

Recipe Substitutions and Variations

  • Swap out your protein with ground chicken or turkey for a leaner option, or just use cooked ground sausage.
