Every dinner needs some delicious veggies for even more nutrition, and these delicious sautéed carrots with honey will even have the kids scrambling to pile them on their plates!

Carrots are arguably THE easiest superfood to include in your diet. Their sweet taste and crunchy texture make them a favorite in most families’ meal rotations.

 

Adding carrots to your diet can help improve your eyesight, teeth, gums, and skin. Carrots are a nutrient dense food that can help lower your risk for cancer and heart disease. They’re also high in fiber, making them ideal for those on a weight loss/management plan.

 

This recipe for Sautéed Carrots with Honey is versatile. You can switch out the dill for your favorite fresh or dried herbs to change things up.

 

The combination of oil and butter helps the carrots cook up tender but also browned and caramelized.

Ingredients You’ll Need To Make Sautéed Carrots with Honey:

  • carrots
  • olive oil
  • butter (dairy free)
  • honey
  • fresh dill
  • salt

How To Make Sautéed Carrots with Honey:

  1. Peel and slice carrots into coins on an angle, about 1/4 inch thick or less
  2. Heat oil and butter in skillet
  3. Add carrots and saute until tender, about 8-10 minutes, stirring often
  4. Add honey and dill and continue heating through, about 1-2 minutes more
  5. Add salt to taste and stir well before serving

Pro Tips:

For a change of pace, try seasoning your Sautéed Carrots with fresh or dried thyme, chives  or, rosemary instead of dill.

 

The thinner you slice the carrots, the faster they will cook.

 

If you prefer using dried herbs, add them a little sooner so that they have time to soften before serving.

 

I prefer regular vs. baby carrots as I believe they have far more flavor and sweetness.

Ingredients

  • 12 oz carrots
  • 1 tablespoon olive oil
  • 1 tablespoon butter (dairy free)
  • 1 tablespoon honey
  • 1 teaspoon fresh dill (chopped)
  • salt (to taste)

Notes

  • Substitute thyme, chives, or rosemary instead of dill 
  • The thinner you slice the carrots the quicker they will cook
  • If using dried herbs, add them a little sooner so that they have time to soften before serving
  • Regular carrots are more flavorful and sweeter
