When the folks over at Simple Slow Cooking contacted me and asked if I’d be interested in trying out a recipe for their blog, I jumped at the opportunity! I always love trying out new recipes and they have so many awesome cookbooks I knew it would be no problem to find something delicious to try. After pouring over the options I finally chose this Southwest Creamy Chicken, Corn and Sweet Potato Chowder from their Gluten-Free Slow Cooking book and it did not disappoint!
Creamy, flavorful, and filled with tender sweet potatoes, crispy corn, juicy chicken and so much more!! The Chipotle Peppers in Adobo are a perfect addition to the creamy base as it gives the whole chowder a smokey and spicy twist. This was a satisfying main meal to my whole family and I also think it would make a wonderful appetizer course at a dinner party.
