What’s To Love About This Recipe

  • This simple slow cooker pork chop recipe feels – and tastes! – deliciously elevated thanks to a ranch herb butter finish instead of heavier options like canned soup or cream cheese.
  • The slow cooker produces tender, juicy pork chops with minimal prep. Just layer the ingredients in the pot, then top with savory butter a few minutes before serving.
  • You don’t need a long ingredient list to get amazing flavor. Just a few simple seasonings, combined with pantry staples, make incredible, bold pork chops, perfect for a weeknight dinner.
  • The savory, spoonable jus is made right in the slow cooker and is essential for serving over the chops along with mashed potatoes, rice, or noodles.
  • This family-friendly comfort food is easy and reliable! The slow cooker keeps it stress-free and ready to serve at the end of the day.

Ingredients Needed

  • Boneless pork chops – Use boneless chops that are at least ¾ to 1 inch thick for even cooking and tenderness. Super-thin pork chops may turn out tougher and overcook more easily.
  • Onion – Slice the onion into thick rings for two purposes: to protect the pork from drying out on the surface of the slow cooker, and also to infuse depth and flavor into the sauce. They are delicious served with the pork chops at the end!
  • Ranch seasoning – Select your preferred packet of ranch seasoning (or use 3 tablespoons of Homemade Ranch Seasoning). This blend creates the irresistible base flavor of the dish.
  • Salt – Add a little extra salt to draw out the meat’s flavor and enhance the overall seasoning.
  • Chicken broth – Broth keeps the pork moist and creates a light gravy to spoon over plates with the chops at the end.
  • Butter – Soften the butter to create a seasoned herb topping for the chops near the end of cooking. This is the key differentiator of this recipe, adding richness without heaviness.
  • Garlic – Finely mince a garlic clove or use 1 teaspoon of jarred minced garlic to add depth to the seasoned butter.
  • Dried parsley and dried chives – Together, these herbs add delicious flavor to the butter, complementing the ranch seasoning.

  1. Cover and cook on low for 5-6 hours (for the best texture) or on high for 2-3 hours. Pork chops should reach at least 145 ℉ and be very tender.
  2. In the last 5-10 minutes, dot the tops of the pork chops with the ranch herb butter. It melts into a silky, flavorful jus that spoons beautifully over the pork.
  3. Stir the onions into the jus, then spoon it over the pork chops when ready to serve.

Pro Tips

  • Searing the pork chops in a skillet first is optional, but not necessary for good results.
  • To best prevent dryness and for the best tender texture, cook the pork chops on low heat. Avoid overcooking on high if possible.
  • Add broth around the edges of the slow cooker to keep the seasoning intact on the chops.
  • Finish with herb butter during the last few minutes so it melts smoothly.
  • Pork is done at 145 ℉, but it will be very tender by the end of cooking. Use a meat thermometer for the most accurate results.
  • Let the pork rest briefly before serving and slicing so the juices redistribute.

Recipe Substitutions and Variations

  • Bone-in pork chops will also work, but they will take slightly longer to cook.
  • Chicken breasts or thighs can be substituted with adjusted timing (chicken will generally cook more quickly than pork). Use this recipe for Slow Cooker Ranch Chicken for complete, adjusted steps!
  • Add chopped baby potatoes or carrots under the pork for a full meal.
  • Use homemade ranch seasoning to best control the salt and flavor.
  • Add sliced mushrooms for extra depth of flavor.

Add a simple green veggie, such as Sautéed Green Beans with Garlic, or a fresh side salad to round out the meal. To finish off your plate, add a dinner roll or toasty slice of bread to soak up the jus!
