Ingredients

  • 4 boneless pork chops ¾-1 inch thick
  • 1 medium onion sliced into thick rings
  • 1 packet ranch seasoning or 3 tablespoons homemade ranch seasoning
  • ½ teaspoon salt
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 1 garlic clove finely minced (or 1 teaspoon jarred)
  • ½ teaspoon dried parsley
  • ½ teaspoon dried chives

Instructions

  • In a small bowl, mix softened butter with garlic, parsley, and chives, then set aside in fridge until later
  • Place onion slices in bottom of slow cooker
  • Lay pork chops on top of onion slices
  • Sprinkle ranch seasoning and salt evenly over pork
  • Pour chicken broth around edges of slow cooker, not directly on top of pork chops (to keep seasoning in place)
  • Cover and cook on low for 5-6 hours (for best texture) or on high for 2-3 hours
  • In the last 5-10 minutes, dot tops of pork chops with ranch herb butter, so it melts into a silky, flavorful jus to spoon over pork
  • Stir onions into jus, then spoon it over pork chops when ready to serve.

Notes

  • Store leftover pork chops in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop with a little extra broth or in the microwave using short intervals.
  • Cook on low heat to prevent dryness and ensure tender texture; avoid using high heat when possible.
  • Finish the pork chops by adding the ranch herb butter during the last few minutes so that it melts smoothly into the sauce.
  • Pork is fully cooked at 145 ℉ and will have a very tender texture.
  • Let the pork chops rest briefly before serving or slicing so the juices can redistribute.
