I’ve had my eye on these little Crock-Pot Lunch Crock Food Warmers since I first spotted them several months ago. But since I tend to get a little overzealous in my purchase of kitchen gadgets I held back and decided to do some web surfing to see what kind of reviews they were getting and how people were using them. I found a lot of good reviews and people were generally saying they were a great tool for heating up leftovers or soup without having to use the office microwave. When I came across one on sale I finally caved  since I had been considering the challenge of coming up with some new lunch ideas.

I love leftovers as much as the next gal and will totally use this for that purpose. But sometimes I just get a little tired of the same meal yet again. Back when I was a cube dweller I would have loved to be able to have a hot delicious lunch without heading to the deli to spend $8 or having to use the breakroom microwave. Even for days at home it’s been fun to throw a few different things in and see how they come out! We’ve had some yummy lunches lately and I would love to share them with you!

This creamy chicken spaghetti was sooooo good! I made a couple of batches to try it out and my son snarfed down a crock full in about 3 seconds flat upon walking in the door from school. It is so easy to bring these ingredients along in your lunch box and then assemble them in the crock about an hour before lunch time. And SO worth it! Creamy Chicken Spaghetti for lunch? Your coworkers will be very jealous! (by the way, you should probably make sure there isn’t a rule against plugging stuff in at your desk before you try this out).

It is so easy to bring the ingredients of this Slow Cooker Creamy Chicken Spaghetti along in your lunch box and then assemble them in the crock about an hour before lunch time. And SO worth it!

Ingredients
  

  • 2 oz spaghetti noodles broke into thirds
  • 3/4 cup chicken broth
  • 1/4 cup chopped cooked chicken I used rotisserie, could use leftover also
  • 1 oz cream cheese
  • 1/2 cup shredded cheese I used a cheddar jack blend
  • 1/4 teaspoon garlic powder
  • pinch of salt and pepper
  • 1 teaspoon dried parsley totally optional, but it looks pretty!

Instructions
 

  • If you are taking this along in your lunch box then place all ingredients except spaghetti in a baggie or container to make it easy to assemble when ready to cook
  • About one hour prior to lunch place all ingredients in lunch crock and give it a stir
  • After one hour carefully remove lid from crock and stir until combined. If noodles are soft it is ready!

    I don’t eat meat but will modify this recipe with mushrooms (I always have sauteed mushrooms and peppers around). I love my lunch crock. Here are some things I’ve used it for: 1) scramble eggs, veggies and cheese. You can bring them to work in a jar, dump them in, and it will make an egg bake. Mine heats to 150-160 (I checked) which is totally safe. I also like a bag of instant grits, milk, a scrambled egg, and cheese. 2) layer a tortilla, beans, veggies, cheese. Cover and bake – easy mexican (pizza sauce, cheese, and veggies are good too!) 3) Dump in cold pasta, veggies, any sauce, and parmesan.
    Because it’s like a low temp skillet,,,, 4) a Frozen veggie burger fits perfectly! Turn after a while. 5) Stacked english muffin roasted veggie cheese sandwiches (turn them over after a while, again).
    Anyway, I LOVE this thing. It takes a while, but that’s ok. The only thing I haven’t tried to do is roast a potato! But I’d like to try. I would love to see other people’s ideas.

  2. I just scored one of these little guys at Tuesday Morning for $12! I like the idea of reheating leftovers, but I love the idea of preparing actual food in it. There seem to be almost no lunch crock recipes out there, so you are definitely filling a need! I can’t wait to read More! Perhaps a macaroni and cheese or mini lasagna? 😉

  4. what if you want to make a full size of this, do double or triple the ingredients??? and do you cook in on high or low for a full size crock?

    1. This recipe was developed specifically for the lunch crock. But it would make a yummy dinner. I will have to start working on a recipe for the full size crock 🙂

  5. OMG!!! I love my lunch crockpot. I keep it at work all the time. Several of us have them. I can’t wait to try this. It sounds wonderful. I can put a can of soup in my crock at 8 am and by 11:30, I have a hot delicious lunch that doesn’t taste that doesn’t taste that like a can of soup.

    1. Isn’t it great to have a lunch option that doesn’t involve a microwave!!! Let me know how it turns out if you make it! I’m working on some more “recipes” for the lunch crock which I will hopefully post soon :).

    1. This recipe is written specifically for the Slow Cooker Lunch Crock. It doesn’t have any temperature settings…so you just plug it in and go! 🙂 I hope you enjoy!
