Slow Cooker Lunch Crock Chicken and Wild Rice Soup
Back by popular demand… another recipe for your Crock-Pot Lunch Crock Food Warmer! You guys are awesome. Taking your lunch to work, being good!! I just love it. So I am going to try and help by making it easy and delicious for you. There is a limit to what you can make in these little crocks since they are made to get to warming temps, not cooking temps. But that doesn’t mean we can’t get creative! You all have been so kind as to share some of your ideas with me and I’m going to do my best not to disappoint!
So, if you work in an office do the people around you get a little jealous when lunch time rolls around? You have a nice hot lunch all ready to go and they are either standing in line for the microwave or dashing out to stand in line at the nearest fast food joint?
Okay, time to get to work! But, at least you have lunch to look forward to, right?!?
Slow Cooker Lunch Crock Chicken and Wild Rice Soup
SaveIngredients
- 1 1/2 cups chicken broth
- 1/2 cup Minute Rice Multi-Grain Medley
- 2 tablespoons whipped cream cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 ounce prosciutto chopped
Instructions
- Add all ingredients to lunch crock warmer and stir
- Add cover and lid and heat for about 1 hour or until rice is done
- Remove lid and stir well until cream cheese is fully blended

Can I make this in a full size crock pot? On low or warm?

I used my lunch crockpot for the first time today, just to heat soup. Was super impressed about how hot my soup was. Can’t wait to get a little more creative. Love this recipe and will try soon.
Wondering if you have any oatmeal recipes? I have found a few egg ones online that sound great. I am not opposed to eating breakfast food for lunch just to change it up and have a little variety. I am in love with my lunch crock.

I made the recipe using minute rice and quinoa. The ratio of rice to broth was off for me because when I opened the lid what I got was fluffy rice instead of soup. Next time I would reduce the rice to just 1/4 cup. I added cooked shredded chicken and topped it off with cilantro, chopped Thai peppers and a dash of soy sauce. Thanks for the recipe,
