I did it! Even though the temperatures have been in the super freezing range, I have been dragging myself out of bed at an insanely early hour and out into the cold to go to the gym. Four days in a row I might add. Helps to have a great friend waiting there to meet me. And it feels great to be back to it after slacking off for a little longer than I would care to admit. And since it would be crazy to do all that work and then end up chowing down on junk food I’ve been working on some new easy healthy slow cooker dishes!
The slow cooker is (in my opinion) the easiest way to stick to your eating plan. Whether it’s home cooked, lightened up, low-carb or whatever you’re trying to do, just having your meals planned and cooking away all day is a major help in staying on track. No more last minute panic of what to eat or finding out you don’t have enough time to cook what you had thawing in the fridge.
This Jerk Chicken is so simple and serves up great along with some coconut rice and some of your favorite sauteed veggies. I used chicken thighs but I think chicken breasts would work as well. Saute them a bit to sear in the juices and flavor and then transfer them to the crock with the super simple sauce. No leftovers at this house means a dinner well done!
1pinchfinely diced habanero pepperseeds removed (or more if you like spicy)
Get Recipe Ingredients
Instructions
Melt butter in skillet over medium high heat (closer to high)
Season both sides of chicken with a little seasoning and place in hot pan
Sear on each side for 2-3 minutes until lightly browned
Transfer to slow cooker
In small bowl whisk together sauce ingredients
Pour over chicken
Cover and cook on high for 3-4 hours or low for 6-8 until chicken is fully cooked

I cooked this on high in my 3.5 quart slow cooker for 3 1/2 hoursBe very careful when dicing habanero not to get juices on your skin (wear gloves if needed). It is very spicy so use only a little pinch unless you enjoy spicier flavors.

I think you could sub jalapeño or just leave it out.
