If there’s one type of recipe I get the most requests for, I’d say it has to be for meals or meal ideas that can be made in a lunch crock food warmer (link below if you don’t know what these are). How many of you have one of these nifty little gadgets? They are basically made for heating leftovers without the use of a microwave, and work wonderfully for that purpose. But you know me! Of course I’ve got to see what more can be done with them, because just eating last nights dinner for lunch the next day can be a little boring. I like to play around and see what other kinds of meals can be made and I’ve come up with another one I think you will like…. Sweet Potato Spaghetti and Meatballs!

Now, the idea is that these can’t really “cook” food because the temperature doesn’t get high enough for long enough. However, this doesn’t mean you can’t still get creative. By using already cooked meatballs (you could use store bought or make up a big batch) and some really thinly spiralized sweet potato noodles you can have a totally fresh meal for lunch in just a couple of hours. There are many spiralizer options out there for making your “noodles”, but this one is my favorite.

Use a homemade marinara or a high quality store bought with little sugar and you have a nutritious meal that will give you energy to tackle your afternoon.

All of this can go along with you to work in little containers and just get assembled in your lunch crock a couple of hours before lunch so that you have a nice steaming hot meal to enjoy.

Ingredients
  

  • 1 small sweet potato
  • 3-4 prepared frozen meatballs
  • 1 cup marinara sauce
  • 1 tablespoon fresh grated parmesan

Instructions
 

  • Wash and peel sweet potato and then spiralize using the spaghetti noodle attachment on your spiralizer
  • Store ingredients separately until ready to prepare
  • Add noodles, then meatballs to lunch crock and top with sauce
  • Add cover and lid and plug in
  • Let heat for 1 1/2 to 2 hours until meatballs heated through and sweet potatoes are tender crisp
  • Serve with grated parmesan
