Slow Cooker Breakfast Tater Tot Casserole
Posting a new recipe the day before Thanksgiving may seem a little odd. But I just want you guys to have time today while you’re out and about doing some last minute shopping to get the ingredients if you don’t already have them on hand. Why? Well, this is for all of you Black Friday shoppers. And for all of you who have guests at your house. A quick and easy breakfast that everyone will love!! Throw it in the slow cooker and head out for some awesome deals!! Or sip on coffee while the house is still quiet and everyone is still snoring away due to their turkey overload. A hot breakfast will be waiting for all as soon as you are ready!
Okay, I admit this is nothing particularly fancy or ground breaking. But having a basic go-to recipes in these situations can be such a great thing! A simple, hearty and filling meal that most everyone will love!!
I actually also really like making this up ahead of time and then we can heat it up as needed! It makes the perfect hot breakfast for a cold fall/winter day. Nice to have on hand for those days where you want the kids to have full bellies but you don’t have much time for cooking up that wholesome meal.

Slow Cooker Breakfast Tater Tot Casserole

- 32 oz bag frozen Tater Tots
- 1 pound ground turkey sausage
- 6 large eggs
- 2 tablespoon heavy cream
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup shredded colby jack cheese
Instructions
- Spray slow cooker well with nonstick cooking spray
- Add about 2/3 of the bag of tater tots in bottom of slow cooker crock
- Whisk together eggs with cream, thyme, garlic powder, salt and pepper
- Pour over tater tots in slow cooker
- In a skillet over medium high heat, brown sausage while breaking apart with spatula until cooked through
- Add cooked sausage on top of eggs and tater tots
- Top it all off with remaining tater tots and 1 cup of cheese
- Cover and cook on high for 2-3 hours or low for 4-6
This looks great. Have you ever tried to “hide” veggies in this? I’m trying to get my toddlers to eat more veggies any way I can. If yes, which ones?
I like using puree’s for that. Like a pumpkin or butternut squash or even sweet potato mixed into sauces!!
What is the serving size on this recipe?
Could I put sausage on bottom and tots on top? I’m using large slow cooker. Want to keep the tots crispy not soggy. Since it’s cooking so long in slow cooker do you need to precook sausage? Thanks.
Hi Sam! Yes, if you have room it’s fine to put all of the tots on the top. I would still precook the sausage, otherwise you may end up with a greasy mess and the meat will be in kind of chunks instead of ground pieces.
Have you ever left out the sausage? Did it take away from the taste at all?
I think it would seem like something was missing without sausage or another substitute in there. You could try bacon? Or vegan sausage crumbles?
Would you assemble the same way in the casserole slow cooker? Same cook time? Have you ever assembled it the night before and cooked in the am?
Hi Laura! To assemble in the casserole slow cooker, I just add ALL of the tots on the top instead of layering them. The cook time should be about the same. To prepare ahead of time, I’d do everything but add the tots and cheese. That way the tots would stay frozen until ready to use so they don’t get soggy during cooking.
Can I make it the night before and then heat it up in the morning?
Absolutely. We make a big batch and heat it up for quick breakfasts all week.

Does it have to be in a oblong cooker?
nope! My only note would be if you use a round slow cooker you may need to increase the cooking time a bit as it may take a little longer to cook in the middle.
I have a 7 quart slow cooker … Can I double the recipe?
Hi Nicole! I used a 5 quart for this and it was pretty full. So I’d say you could take it x 1.5 but I don’t think if you doubled it that it would all fit.
As a former competitive swimmer I am hopeless as to what a normal serving size is without my measuring cups.Do you have a ballpark idea of serving size and nutritional facts? Or at least a serving size?
Hi Sharon! This should serve about 6-8 on average. You can import the recipe into My Fitness Pal and customize the ingredients you use to get a good estimate of the nutritional value 🙂
I never would have thought of putting tator tots in the slow cooker. This looks gooey and good! This would be great on Christmas morning.
