Slow Cooker Beer Braised Chipotle Chicken Tacos

To say I’m a bit of a taco addict would be a bit of an understatement. At this point, I’ve lost count of the number of taco recipes I’ve shared here over the years, but it doesn’t matter anyway, because you can never have too many options when it comes to tacos. Tacos for breakfast, lunch and dinner? I don’t see any issues with that at all. And to get the most tender, flavorful and all around tasty tacos with the least amount of effort? Why not try cooking them low and slow all day in your favorite beer?!

I have an obsession with creating recipes that are full on flavor and taste like they are a lot of work and effort, but really only take like 5 minutes and 5 ingredients. Because even if you love cooking, and don’t mind tackling even the most complicated recipes, the reality is that most days we barely have time to make a sandwich. When you can have a delicious recipe like these chipotle chicken tacos with about the same amount of work on your part, why wouldn’t you make them?

What kind of chicken is best for chicken tacos?

Whatever you have on hand and whatever you like best. You can use breasts or thighs for this recipe and both will turn out delicious. I personally prefer thighs as they have more flavor and don’t dry out as quickly, but given the fact that we are cooking this in liquid all day it won’t be too much of an issue.

You can even use bone-in chicken if you want, you’ll just need to be careful to remove skin and all bones after cooking and before shredding, which could be quite a bit of work.

What kind of beer is best for these chicken tacos?

The short answer is… your favorite kind of beer!

That being said, I recommend something light, refreshing and fruity to go best with the smoky Chipotle flavors. I chose Superfuzz Blood Orange Pale Ale by Elysian and anything along that lines would be perfect.

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken thighs breasts are fine as well
  • 2 tablespoon homemade taco seasoning
  • 2 chipotle chili peppers, chopped from can
  • 6 oz pale ale or other favorite beer

Instructions
 

  • Add all ingredients to slow cooker
  • Cover and cook on high for 3-4 hours or low for 6-8
  • Remove chicken from slow cooker and shred.  Add a bit of juice to the chicken and discard remaining.
  • Serve on tacos shells of choice along with guacamole and cilantro or as desired

    This was wonderful! I doubled the recipe so I could use the whole bottle of Shiner peach beer I had leftover in my fridge and only used a couple of chipotle peppers. We ate it all week – tacos, in taco salad, on nachos… Highly recommend this recipe!
