Can you cook mac and cheese pasta in a slow cooker?

  • The answer is… yes!
  • It takes a little bit of a watchful eye after adding the pasta to make sure it cooks evenly.
  • Cook the chicken in the broth/sauce base first.
  • Add the pasta in the last 30-45 minutes and stir a few times to ensure it cooks just right.
  • You don’t even need a fancy or special slow cooker to so this. I used my favorite basic 5 quart slow cooker!

Another important note regarding the pasta… be sure to use shell pasta. You need all the little pockets to be able to hold all of the cheese. Cheese to pasta ratio is an important consideration when it comes to good mac and cheese.

There’s a little trade-off here in the time it takes to make this meal. You’re going to save some time by tossing the pasta right in the crock. But you’ll take a few minutes to make a from scratch cheese sauce because it’s worth it. Really. This will be the key that makes this the best buffalo chicken mac and cheese you’ve ever had.

How do you make cheese sauce for buffalo chicken mac and cheese?

The buffalo sauce part of this dish will go into the slow cooker with the chicken. I suggest starting with less and adding more once the dish is done if you are unsure how spicy you would like it.

While I often make cheese sauces right in the slow cooker (see my cheesy buffalo chicken pasta) this time I’m suggesting taking the few extra minutes to make it on the stove.

If you’ve never made cheese sauce before it’s really just melting butter and whisking in some flour to create a thickener/paste. Let the flour cook a few minutes. Then slowly add milk and let it thicken and simmer. Finally, stir in shredded cheese.

Be sure you use cheese you’ve shredded yourself from the block when making cheese sauces. Pre-grated cheese has an anti-caking agent that will leave you with a grainy sauce.

  1. Perfect comfort food on a cold December day! Added closer to 3/4 cup buffalo sauce, but only because my family loves spicy foods. Definitely going to make again!

Wonderful recipe! I used evaporated milk instead. After slow cooking I transferred the mac and cheese into a prepared baking dish and added the cheese sauce at that point. I topped with Italian Panko and baked in 350 degree oven for 25 minutes. Dinner party worthy! Thanks for sharing!

  3. I made this for family dinner night and it was delicious. My only thing is I had to much liquid from the chicken. I was unsure how to fix this the cheese was good and thickened. So I added some more flour but still didnt thicken up nicely. I think next time before I add the cheese I’d drain some of the water.

  4. Used a can of chickpeas instead of chicken and skipped adding any water with the pasta. Another winner!

  5. Was thinking about trying this for a company potluck. Problem is we do not have a stove top to use for the cheese sauce during the day. Have you ever made the cheese sauce up prior and keep it refrigerated until needing to add it in. Trying to figure out how to make the cheese sauce work in this situation.

We gave it a shot this weekend and it actually came out pretty good. We added a little water and more buffalo sauce to the pot as it was heating up and it was still a fan favorite. Thank you!

  6. Can you make this without chicken? Would you add the spices to the cheese sauce? And then just add it to cooked noodles?

    1. Hi Jordan! To make it without the chicken I would skip the slow cooker and just cooker the noodles as you usually would on the stove. Make the cheese sauce per the recipe and just toss!

  7. Just made this for a potluck tomorrow. God bless is it good. Needless to say I’m eating it right now instead of waiting till the potluck.

Is there a way to convert this recipe into a stove top one? I have made this before in a slow cooker but as I am in college now I do not have one.

      1. If you want to double the recipe, would you double all ingredients including the chicken broth?
