Using a nice sharp knife, cut chicken into tiny pieces
Drain and finely dice water chestnuts
Place chicken and water chestnuts into slow cooker
In a small bowl, whisk together sauce ingredients
Pour over chicken mixture in the slow cooker
Cook on low for 6-8 hours or high for 3-4 hours

Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Reheating in a skillet with broth or in the microwave in short intervals to prevent drying out.
The internal temperature of the chicken should reach 165°F to be fully cooked.
To make gluten-free, use tamari or coconut aminos in place of soy sauce. Check to make sure chili garlic sauce is also gluten-free.
To thicken the sauce, add a little cornstarch slurry (equal mix of cornstarch and water) near the end of cooking. Adjust the amount up or down depending on preference.
