Slow Cooker Honey Garlic Chicken

Honey garlic chicken is a fan favorite on many restaurant menus, and now you can make this tasty dish at home! Combine chicken and water chestnuts with a quick homemade sauce in the slow cooker and let it simmer away. Serve on lettuce wraps or over a bowl of rice for a filling and delicious meal!

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 8 ounce can water chestnuts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons blackberry jam seedless
  • 1 tablespoon cornstarch
  • 2 teaspoons minced garlic
  • 1/2 teaspoon chili garlic sauce
  • 1/2 teaspoon garlic powder

Instructions

  • Using a nice sharp knife, cut chicken into tiny pieces
  • Drain and finely dice water chestnuts
  • Place chicken and water chestnuts into slow cooker
  • In a small bowl, whisk together sauce ingredients
  • Pour over chicken mixture in the slow cooker
  • Cook on low for 6-8 hours or high for 3-4 hours

Notes

  • Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Reheating in a skillet with broth or in the microwave in short intervals to prevent drying out.
  • The internal temperature of the chicken should reach 165°F to be fully cooked.
  • To make gluten-free, use tamari or coconut aminos in place of soy sauce. Check to make sure chili garlic sauce is also gluten-free.
  • To thicken the sauce, add a little cornstarch slurry (equal mix of cornstarch and water) near the end of cooking. Adjust the amount up or down depending on preference.
