Equipment

  • pressure cooker

Ingredients

  • 6 ears corn on the cob
  • 1 cup water
  • 1 teaspoon kosher salt
  • 2 tablespoons butter

Instructions

  • Add water to bottom of pressure cooker
  • Add a trivet (I used the one that came with my pressure cooker), and place corn on top
  • Cover and seal, and set to high pressure for 2 minutes
  • Once finished, perform a quick steam release, carefully remove corn with tongs, and place it in a bowl
  • Add butter and let it melt, then toss corn and butter together with salt and serve

Notes

  • Store leftover corn (on or off the cob) in the fridge for up to 3 days and reheat in the microwave.
  • Try leftover corn in lots of different recipes!
  • Try out different seasoning blends if you want to include other flavors. Garlic salt and parsley or a premixed elote seasoning would be delicious.
