Ingredients

  • 1 ½ pounds of boneless skinless chicken breasts
  • 2 tablespoons butter
  • 1 tablespoon jarred minced garlic
  • 1 ½ teaspoons Italian dressing mix or Italian seasoning blend, divided
  • ½ teaspoon crushed red pepper
  • 1 cup chicken stock
  • ½ cup sun-dried tomatoes
  • 2 tablespoons tapioca flour
  • ½ cup heavy cream
  • ¼ cup parmesan cheese

Instructions

  • If chicken breasts are large, cut into 4-6 equal-sized pieces and sprinkle evenly on both sides with 1 teaspoon of the Italian seasoning
  • Melt butter in skillet or multicooker over medium-high heat
  • Cook chicken on each side until lightly browned
  • Transfer to slow cooker and add minced garlic, the rest of the seasoning blend, red pepper, chicken stock, and sun-dried tomatoes
  • Cover and cook on high for 2-3 hours or low for 4-6
  • Mix tapioca flour with just enough water to make a slurry and add to slow cooker
  • Stir in cream and parmesan cheese and let continue to heat through for 30 minutes

Notes

  • The sun-dried tomatoes add so much richness and depth to this recipe, but if preferred, you can leave them out. Try adding another savory ingredient such as roasted red peppers or a sprinkle of capers.
  • To thicken the sauce, add additional slurry (either tapioca flour or cornstarch and water) in small increments. You can also substitute flour in the slurry and use a gluten-free variety as needed!
  • When removing chicken from the slow cooker, allow it to rest for a few moments before slicing.
