1 pound ground Italian sausage mild or spicy 1 medium onion diced 1 yellow or orange bell pepper diced 1 zucchini chopped 3 cloves garlic minced 1 24 oz jar marinara sauce (use a high-quality brand made with olive oil and no added sugar) 2 cups beef broth 1 teaspoon Italian seasoning optional, taste before adding 1 9 oz package refrigerated cheese tortellini 1 cup baby spinach or chopped kale ½ cup heavy cream Parmesan cheese for serving
