Ingredients

  • 12 oz Andouille Style Chicken Sausage sliced 1/2" thick
  • 10 oz baby potatoes halved
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Instructions

  • Slice sausage and potatoes
  • Toss all ingredients in slow cooker
  • Cook on high for 2-3 hours or low for 4-6 hours

Notes

  • Store in the fridge for up to 3 days. I do not recommend freezing due to textural changes that will occur with the potatoes.
  • Reheat in the microwave or in the oven until warmed through.
  • Optional: Garnish with finely chopped parsley
