Slow Cooker London Broil

Ingredients

  • 2 pound top round roast London broil
  • 2 tablespoons pot roast seasoning
  • 1 cup beef broth
  • 1 tablespoon cornstarch

Instructions

  • Place roast in slow cooker
  • Season with pot roast seasoning
  • Carefully pour in broth around bottom of slow cooker so seasonings do not wash off
  • Cover and cook on low for 8-9 hours or high for 4-5 hours
  • Mix cornstarch with 2 tablespoons of water until smooth, then stir into juice in slow cooker
  • Cover and continue to heat for an additional 30 minutes, or until juices have thickened
  • Shred roast and serve it with potatoes or noodles, and pour juices over the top

Notes

  • Store leftovers in an airtight container for 4 days in the fridge or in the freezer for up to 3 months.
  • Reheat with a splash of broth on the stovetop or in the microwave, covered, to prevent drying out. Thaw first if frozen.
  • Let the roast rest for at least 10 minutes before slicing or shredding to retain the juices.
  • Cook on low for the most tender results.
  • Browning the roast first adds flavor, but it is an optional step.
