This is a meal you certainly want to slow down and enjoy! Slow Cooker Beef Bourguignon is simple enough to make in a few hours but produces the gourmet results you’d expect from cooking all day. Enjoy this rich and flavorful stew that brings together tender beef, deep red wine, potatoes, sweet onions, and more!
Heat a skillet over medium-high heat and add chopped bacon
Cook bacon, stirring often, until browned
Remove bacon from skillet and add to slow cooker
Season beef cubes with thyme, salt, and pepper and add to same skillet with remaining bacon drippings
Cook for 3-4 minutes on each side until browned
Transfer beef to slow cooker
Add carrots, potatoes, onions, and garlic to slow cooker
Mix together wine, broth, tomato paste, and tapioca pearls
Pour mixture over beef in slow cooker
Cover and cook on high for 2-3 hours or low for 4-6 hours
Serve with crusty bread or as desired
Notes
Store leftover stew in a sealed container in the fridge for up to 3 days. Reheat on the stovetop over low heat with a splash of broth as needed, or use the microwave in short intervals, stirring between each.
You can also use stew meat if preferred.
When cooking with wine, use something you’d enjoy drinking as well.
Baby carrots can also be substituted for regular carrots.
I recommend cooking on low for at least 4-6 hours for the most tender beef.
