Ingredients

  • 2.5 lbs russet potatoes peeled and diced
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 8 oz whipped cream cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • Cooked crumbled bacon, chives, sour cream, and shredded cheese for garnish

Instructions

  • In a slow cooker, combine diced potatoes, onion powder, garlic powder, chicken broth, salt, and pepper
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until potatoes are tender
  • Once cooked, use a potato masher or immersion blender to lightly blend some of the potatoes to desired soup consistency
  • Stir in room temperature cream cheese, shredded cheddar cheese, and heavy cream until well combined and the cheese is melted
  • Cover and cook on low for an additional 15-20 minutes to allow the flavors to meld
  • Garnish individual bowls with toppings

Notes

  • Store leftover soup in an airtight container in the fridge for up to 3 days.
  • Reheat gently on the stove or in the microwave, stirring occasionally, and add a splash of milk or broth if the soup becomes too thick.
  • To thicken the soup, blend or mash a bit more of the potatoes, or leave the soup uncovered to simmer for a short time near the end of cooking.
  • For a thinner soup, stir in extra broth or a small amount of milk.
  • Allow cream cheese to reach room temperature before adding it to the slow cooker.
