Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 tablespoon jarred minced garlic
  • 2 teaspoons Italian seasoning blend
  • 1 cup chicken stock
  • ½ cup sun-dried tomatoes
  • 2 tablespoons cornstarch or tapioca flour
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Optional ¼ cup chopped fresh basil or parsley for garnish

Instructions

  • Cut chicken into about 4-ounce pieces and add to slow cooker along with garlic, seasoning, broth, and tomatoes
  • Cover and cook on high for 2-3 hours or low for 4-6 hours until chicken is cooked through, reaching 165 ℉
  • Mix cornstarch with 2 tablespoons of water and add slurry into slow cooker along with cream, Parmesan cheese, and spinach
  • Let ingredients heat through for an additional 30-45 minutes
  • Serve over rice, noodles, mashed potatoes, or as desired

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently on the stove or in the microwave.
  • Be sure to add spinach near the end so it wilts but does not turn mushy.
  • To thicken the sauce, stir in additional cornstarch slurry during the last 30-45 minutes.
  • Garnish with fresh basil or parsley, and add an extra sprinkle of Parmesan just before serving.
