1 ½ pounds boneless skinless chicken breasts 1 tablespoon jarred minced garlic 2 teaspoons Italian seasoning blend 1 cup chicken stock ½ cup sun-dried tomatoes 2 tablespoons cornstarch or tapioca flour ½ cup heavy cream ¼ cup grated Parmesan cheese 2 cups fresh spinach Optional ¼ cup chopped fresh basil or parsley for garnish

Cut chicken into about 4-ounce pieces and add to slow cooker along with garlic, seasoning, broth, and tomatoes
Cover and cook on high for 2-3 hours or low for 4-6 hours until chicken is cooked through, reaching 165 ℉
Mix cornstarch with 2 tablespoons of water and add slurry into slow cooker along with cream, Parmesan cheese, and spinach
Let ingredients heat through for an additional 30-45 minutes
Serve over rice, noodles, mashed potatoes, or as desired
Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently on the stove or in the microwave.
Be sure to add spinach near the end so it wilts but does not turn mushy.
To thicken the sauce, stir in additional cornstarch slurry during the last 30-45 minutes.
Garnish with fresh basil or parsley, and add an extra sprinkle of Parmesan just before serving.
