Equipment

  • 2-3 quart slow cooker

Ingredients

  • 8 oz whole-milk ricotta cheese
  • 4 oz cream cheese softened
  • 1 cup freshly shredded low-moisture mozzarella
  • ½ cup freshly grated Parmesan cheese
  • 1 cup thick pizza sauce
  • ½ teaspoon Italian seasoning
  • Optional topping: sliced pepperoni olives, or sautéed mushrooms

Instructions

  • Lightly grease inside of a small (2 to 3-quart) slow cooker
  • In a bowl, stir together ricotta, cream cheese, pizza sauce, Italian seasoning, and half of mozzarella until smooth
  • Spread mixture evenly into slow cooker
  • Sprinkle remaining mozzarella and Parmesan over top, and add optional toppings if desired
  • Cover and cook on low for 2-3 hours, until dip is fully warmed and melted
  • Stir gently halfway through, then again before serving, for an ultra-creamy texture
  • Switch to warm setting and serve directly from slow cooker

Notes

  • Store leftover pizza dip in an airtight container in the refrigerator for 2-3 days (do not freeze since the dairy will separate).
  • Reheat single servings in the microwave in short bursts, stirring between for even heating. Additionally, you can reheat the dip in an oven-safe dish at 325-350 ℉ until warmed through and melty.
  • Stir once or twice and add a splash of milk if needed.
  • Soften the cream cheese before adding it to the slow cooker for smoother melting.
  • Use low-moisture mozzarella only and shred your own cheese for the best texture and melting.
  • The dip should be warm and melty, not bubbling or browned.
  • If the dip is too stringy, continue heating gently until fully melted.
  • Once melted, keep on the warm setting for serving for up to 2-3 hours, stirring occasionally to prevent burning around the edges.
