Ingredients

  • 3-4 lb beef chuck roast
  • 1 tablespoon homemade Italian seasoning or store-bought
  • 1 cup low-sodium beef broth
  • ½ cup sliced pepperoncini with juice
  • ½ cup sliced banana peppers with juice
  • 1 small onion thinly sliced
  • 4 cloves garlic minced
  • Salt to taste

Instructions

  • Place chuck roast in slow cooker
  • Sprinkle roast with homemade Italian seasoning
  • Add broth, onion, garlic, pepperoncini with juice, and banana peppers with juice
  • Cover and cook on low for 8-9 hours or on high for 4-5 hours, until beef is tender and shreds easily
  • Shred beef directly in slow cooker, then stir to coat with juices, adding salt to taste

Notes

  • Store shredded beef and jus in separate airtight containers in the fridge for 3-4 days, or freeze beef in a sealed container or bag for up to 3 months.
  • Reheat in a skillet over low-to-medium heat with a splash of jus, or microwave in short intervals until heated through.
  • Chuck roast is the ideal meat cut because it breaks down into juicy, flavorful shreds during slow cooking.
  • Save the jus in the slow cooker for dipping sandwiches or spooning over bowls before serving.
