Easy Slow Cooker Chicken and Stuffing

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon garlic and herb seasoning
  • 10 oz frozen cut green beans
  • 8 oz carrots peeled and sliced ½ inch thick
  • 1 box 6oz chicken-flavored stuffing mix
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • ½ cup heavy cream
  • 1 tablespoon powdered chicken bouillon or one cube
  • ½ teaspoons salt

Instructions

  • Add chicken to slow cooker and sprinkle with seasoning blend evenly
  • Top with green beans and carrots (or vegetables of choice)
  • Top with contents of stuffing box and spread evenly over chicken
  • Melt butter in microwave in a small glass bowl and let it cool slightly
  • Whisk flour into melted butter until smooth
  • Whisk in broth, cream, bouillon, and salt
  • Pour over mixture in slow cooker
  • Cover and cook on high for 2-3 hours or low for 4-6 hours until chicken is cooked through
  • If desired, leave cover off slow cooker for the last 30 minutes to crisp up stuffing

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a 350 ℉ oven (covered with foil) for 15-20 minutes, and broil briefly to re-crisp the top (optional). Or, use the microwave in 30-second intervals, stirring occasionally.
  • Layer the ingredients instead of stirring to keep the texture of the stuffing.
  • Grease the slow cooker or use a liner for easy cleanup.
