Ingredients

  • 1 pound carrots
  • 3 tablespoons butter
  • 1 tablespoon honey
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt

Instructions

  • Wash, peel, and slice carrots into coins
  • Melt butter and stir in honey, dill, and salt
  • Put carrots in slow cooker and pour honey butter mixture over the top
  • Cover and cook on high for 2-3 hours or low for 4-6 hours until carrots are tender

Notes

  • Store leftovers in airtight containers in the fridge for up to 3 days.
  • Reheat in 30-second increments in the microwave.
  • Freeze leftovers for up to 3 months in a sealed container. Allow the carrots to fully thaw prior to reheating. Drain any excess liquid before reheating to prevent the carrots from becoming mushy.
  • I made this recipe in my 2-quart slow cooker on high for 3 hours.
