Slow Cooker Tequila Lime Pork Roast

Ingredients

Pork roast:

  • 2 pound boneless pork loin roast
  • 2 teaspoons Caribbean Jerk seasoning blend like McCormick's
  • 1 tablespoon canola oil
  • 2 oz tequila
  • 1 cup pineapple juice
  • Juice from 1 lime about 2 tablespoons
  • 2 cups frozen pineapple

Optional gravy:

  • juices from slow cooker
  • 1 tablespoon cornstarch

Coconut rice:

  • 2 cups long-grain white rice
  • 14 oz can coconut milk

Instructions

  1. Season pork roast well with jerk seasoning blend
  2. Heat canola oil in skillet over medium high heat and sear for 4-5 minutes on each side or until nice and golden brown
  3. Deglaze pan by carefully pouring in tequila and let it simmer for 1-2 minutes
  4. Add in pineapple juice and lime juice and let simmer 1-2 minutes more
  5. Transfer roast to slow cooker along with juices and add frozen pineapple
  6. Cover and cook on low for 7-9 hours until thoroughly cooked through
  7. Slice to serve

Optional gravy:

  1. Strain juices from slow cooker into a saucepan
  2. Whisk together cornstarch with 1 tablespoon of water until smooth and add to juices
  3. Bring to a boil over medium to high heat and continue whisking for 2-4 minutes or until gravy is thickened

Coconut Rice:

  1. Cook rice according to package directions except you will sub out 14 oz of water for 14 oz coconut milk

I cooked this on low in my 4 quart multi cooker for 8 hours
