Slow Cooker Braised Beef Ragu {for 2}

Ingredients

Instructions

  • Season roast with herb and garlic seasoning
  • Preheat olive oil over medium high heat in cast iron or heavy bottomed skillet
  • Add roast and cook for 2-3 minutes per side until browned
  • Transfer to slow cooker
  • Mix together remaining ingredients except pasta
  • Pour over roast
  • Cover and cook on high for 3-4 hours or low for 6-8
  • Once beef is cooked through, shred roughly with forks and stir back into sauce
  • Serve over cooked noodles and top with fresh parmesan and herbs or as desired

Notes

  • Regular crushed tomatoes can be subbed for fire roasted
  • Remove any large pieces of excess fat before cooking meat
  • Add a splash of red wine for extra richness
