Slow Cooker Braised Beef Ragu {for 2}

Season roast with herb and garlic seasoning
Preheat olive oil over medium high heat in cast iron or heavy bottomed skillet
Add roast and cook for 2-3 minutes per side until browned
Transfer to slow cooker
Mix together remaining ingredients except pasta
Pour over roast
Cover and cook on high for 3-4 hours or low for 6-8
Once beef is cooked through, shred roughly with forks and stir back into sauce
Serve over cooked noodles and top with fresh parmesan and herbs or as desired
Regular crushed tomatoes can be subbed for fire roasted
Remove any large pieces of excess fat before cooking meat
Add a splash of red wine for extra richness
