Instant Pot Chicken and Dumplings

These Instant Pot Chicken and Dumplings taste just like the ones you know and love but come together for a quick dinner in no time!

Ingredients

  • 1 pound boneless skinless chicken thighs
  • 3/4 cups mushrooms cut to bite size pieces
  • 3/4 cups carrots peeled and cut to bite sized pieces
  • 1/2 cups yellow onion cut to bite size pieces
  • 1 tsp Italian seasoning
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4 cups corn I used frozen
  • 3/4 cups peas I used frozen
  • 1 1/2 cups chicken broth
  • 1/4 cup heavy cream
  • 1 lb dried gnocchi
  • 2 tbsp cornstarch mixed with 2TBSP of water, for later

Instructions

  • Add chicken to pressure cooker along with veggies (not frozen ones), broth and seasonings
  • Cover and set to manual high pressure for 12 minutes
  • Allow 10-15 minutes natural pressure release then quick release remaining
  • Remove chicken and shred
  • Switch pot to saute
  • Stir in frozen veggies, cream, gnocchi and cornstarch mixture
  • Add chicken back in and simmer until sauce is thickened
