Instant Pot Chicken and Dumplings

1 pound boneless skinless chicken thighs 3/4 cups mushrooms cut to bite size pieces 3/4 cups carrots peeled and cut to bite sized pieces 1/2 cups yellow onion cut to bite size pieces 1 tsp Italian seasoning 1 tsp dried parsley 1/2 tsp garlic powder 1/2 tsp salt 1/2 tsp pepper 3/4 cups corn I used frozen 3/4 cups peas I used frozen 1 1/2 cups chicken broth 1/4 cup heavy cream 1 lb dried gnocchi 2 tbsp cornstarch mixed with 2TBSP of water, for later
Add chicken to pressure cooker along with veggies (not frozen ones), broth and seasonings
Cover and set to manual high pressure for 12 minutes
Allow 10-15 minutes natural pressure release then quick release remaining
Remove chicken and shred
Switch pot to saute
Stir in frozen veggies, cream, gnocchi and cornstarch mixture
Add chicken back in and simmer until sauce is thickened
