White Chocolate Cranberry Shortbread Bars

- 2 sticks of butter
- ¾ cup sugar
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 1 egg
- 2 cups flour
- 4 oz white chocolate baking bar chopped (or white chocolate baking chips)
- 1/2 cup cranberries
Spray the bottom of your crock with nonstick spray (make sure to get it coated well)
With your mixer beat together butter, sugar and vanilla
Add egg and salt and mix until combined
Add flour a little at a time and mix until dough forms
With wooden spoon stir in white chocolate and cranberries
Spread evenly in bottom of slow cooker
Cook covered on low for 2 - 3 hours (if slow cooker lid is not vented, prop open slightly with wooden spoon to allow steam to escape)
I cooked these on low for 2 1/2 hours in my 4 quart casserole slow cooker
Use a good quality white chocolate
