Slow Cooker Teriyaki Chicken

1 1/2 pounds boneless skinless chicken breast 1/4 cup soy sauce 1/4 cup honey 2 tablespoons rice vinegar 2 tablespoons brown sugar 2 teaspoons jarred minced garlic 1/4 teaspoon ground ginger 2 tablespoons cornstarch
Add chicken to slow cooker
Whisk together all remaining ingredients except for cornstarch
Whisk cornstarch with 2 tablespoons of water until smooth, then whisk into sauce
Pour sauce over chicken in slow cooker
Cover and cook on low for 6-8 hours or high for 3-4
Remove and shred chicken and return to sauce
Recipe tips:
if sauce is not thick enough you can also pour into a saucepan and simmer for a few minutes until thickened
you can also cut chicken into small bite sized pieces before cooking if preferred
if you choose to add some veggies to this recipe, stick with carrots or other hearty root veggies that won't get too soft while cooking
