Slow Cooker Teriyaki Chicken

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons jarred minced garlic
  • 1/4 teaspoon ground ginger
  • 2 tablespoons cornstarch

Instructions

  • Add chicken to slow cooker
  • Whisk together all remaining ingredients except for cornstarch
  • Whisk cornstarch with 2 tablespoons of water until smooth, then whisk into sauce
  • Pour sauce over chicken in slow cooker
  • Cover and cook on low for 6-8 hours or high for 3-4
  • Remove and shred chicken and return to sauce

Notes

Recipe tips:

  • if sauce is not thick enough you can also pour into a saucepan and simmer for a few minutes until thickened
  • you can also cut chicken into small bite sized pieces before cooking if preferred
  • if you choose to add some veggies to this recipe, stick with carrots or other hearty root veggies that won't get too soft while cooking
