Ingredients

For chops:

  • 4 thick cut pork chops
  • 2 tablespoons butter
  • 1 teaspoon dried rubbed sage
  • 1 teaspoon dried thyme
  • 1 teaspoon roasted garlic powder
  • 1/2 cup chicken broth

For salsa:

  • 3 ripe peaches
  • 1 jalapeno
  • 2 tablespoons red onion
  • 2 red mini sweet peppers
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 1/2 teaspoon sea salt

Instructions

For chops:

  • Heat skillet or multi-cooker to medium-high heat
  • Melt butter in skillet
  • Season chops with seasonings, using hands to press seasoning into chops
  • Brown for about 3-4 minutes on each side or until golden brown
  • Transfer to slow cooker and add broth
  • Cover and cook on high for 3-4 hours or low for 6-8

For salsa:

  • Peel and dice peaches (remove pit)
  • Peel and dice onion
  • Remove ribs and seeds from peppers and finely dice
  • Toss together in bowl with lime juice, olive oil and salt (to taste)
  • Serve pork chops topped with salsa
