With only a few ingredients and a shortcut to a basic crust, you can have a delicious brunch ready for a slow weekend or early weekday mornings.
Brown sausage in skillet over medium-high heat until fully cooked, drain any grease
Spray slow cooker insert with non-stick spray
Unroll crescent rolls into a sheet and lay in bottom of slow cooker, pressing seams together
Whisk together egg, milk, salt and pepper
Pour over rolls
Top with cooked sausage
Top with cheese
Cover and cook on high for 2-3 hours or low for 4-6

Prep ahead by browning sausage and storing in the fridge until ready to assemble the casserole.
Store leftovers in the fridge for up to 3 days in a sealed container. To freeze leftovers, wrap tightly or seal individual servings in a container. Freeze for up to 3 months.
Reheat individual servings in the microwave for 30-60 second increments or in the oven until just warmed through.
I made this in my casserole-sized slow cooker on high for 2.5 hours. In my 6-quart oval slow cooker, it took slightly longer at about 3 hours.
