Blueberry Chipotle Smoked BBQ Ribs
These Blueberry Chipotle Smoked BBQ Ribs are the most flavorful ribs you will eat all summer! Perfect for Food Truck Friday with a sweet spicy kick of flavor for these boneless beef ribs.

2 pounds boneless beef ribs 1 teaspoon all purpose BBQ seasoning blend 1 cup BBQ sauce (homemade or bottled) 1/2 cup blueberry preserves (no sugar added) 1 tablespoon adobo sauce from canned chipotle peppers
Slow Cooker Method: Season ribs with bbq rub and place in slow cooker
Whisk together BBQ sauce, blueberry preserves and adobo sauce
Pour half of sauce over ribs in slow cooker
Cover and cook on low for 7-9 hours
Drizzle or toss with additional sauce and serve
Slow Smoker Method: Preheat smoker to 225 degrees according to manufacturer instructions
Season ribs with BBQ rub and place on grill
Whisk together BBQ sauce, blueberry preserves and adobo sauce and store in fridge until ready to use
Once ribs get to about 160 degrees internally (2-3 hours) wrap in foil and brush with BBQ sauce mixture
Continue cooking until ribs reach internal temp of 200 degrees for most tender ribs
Let rest 10-15 minutes before serving, brush with additional sauce as desired
You can cook these in a 4 quart slow cooker (I used my multi-cooker ) or on a smoker grill (I used my Traeger )
