Slow Cooker Greek Chicken Pita Wraps

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast
  • 2 lemons, juiced
  • 1 fresh rosemary sprig, chopped
  • 1/4 cup olive oil
  • 3 garlic cloves, peeled and chopped
  • 1/4 teaspoon sea salt
  • 1 english cucumber, quartered and chopped
  • 1 cup chopped kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons red wine vinegar
  • 8 pita pockets

Instructions

  • Add chicken breast to slow cooker and top with lemon juice, chopped rosemary, olive oil, garlic and sea salt
  • Cover and cook on high for 3-4 hours or low for 6-8
  • Shred cooked chicken
  • Toss together chopped cucumber, olives, onion and cheese with vinegar
  • Add chicken and cucumber mixture to pita pockets and serve
