Slow Cooker Split Pea Curry

Ingredients

  • 1 1/2 cups dry split peas
  • 28 oz can crushed tomatoes
  • 15 oz can coconut milk
  • 1/2 cup diced sweet onion
  • 3 cloves garlic minced
  • 1 tablespoon green curry paste
  • 1 tablespoon turmeric
  • 2 teaspoons curry powder
  • 1/2 teaspoon ground ginger
  • 1/2 - 1 teaspoon salt
  • 1 cup heavy cream
  • 3 cups basmati rice
  • fresh cilantro for garnish optional

Instructions

  • Place all ingredients except cream, rice and cilantro in slow cooker
  • Cover and cook on high for 3-4 hours or low for 6-8 until peas are tender
  • Stir in cream (or to make it vegan you could use refrigerated plain coconut milk)
  • Cook rice according to package directions
  • Serve rice topped with split pea curry and garnish with cilantro
