Slow Cooker General Tso Chicken

1 1/2 pounds boneless skinless chicken breasts 1/2 cup tapioca flour or cornstarch 2 tablespoons avocado oil 1/4 cup tamari 1/4 cup gluten free hoisin sauce 1/4 cup coconut sugar 2 tablespoons rice vinegar 1 tablespoon sriracha 1/2 teaspoon dried ginger 1/4 teaspoon red pepper flakes
Cut chicken into large bite sized chunks
Place in plastic zipper bag along with tapioca flour and shake to coat well
Heat oil in skillet over medium high heat
Shake excess flour from chicken and arrange in pan in single layer
Cook for about 2-3 minutes on each side until lightly browned
Transfer to slow cooker
Whisk together remaining ingredients and pour over chicken
Cover and cook on high for 2-3 hours or low for 4-6
To quickly brown chicken, make sure pan is very hot.
Increase spiciness by adding more sriracha, red pepper flakes, etc.
Serve with rice, sauteed greens, etc.
