Ingredients

  • 1 1/2 pounds chicken breast
  • 1/4 cup flour regular or gluten-free
  • 2 tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 1 green peppers diced
  • 1 cup cleaned and sliced kale
  • 1 teaspoon herb and garlic seasoning
  • 1 teaspoon chili seasoning
  • 12 oz beer
  • 14 oz can diced tomatoes
  • 1 tablespoon honey
  • 1 tablespoon tapioca flour or cornstarch, whisked with 1 tablespoon of water
  • 4 slices cooked and crumbled bacon

Instructions

  • Lightly coat chicken in flour
  • Heat olive oil in skillet or multi-cooker
  • Add chicken and cook for 3-4 minutes on each side until lightly browned and crispy
  • Transfer to slow cooker
  • Add all remaining ingredients except bacon
  • Cover and cook on high for 2-3 hours or low for 6-8 until chicken is cooked through
  • Serve chicken over steam rice and topped with bacon

Notes

  • Use boneless chicken breasts or tenderloins
  • Cook on high to braise, but also works well on low
  • Pumpkin beer or a stout beer works well
