1 1/2 pounds chicken breast 1/4 cup flour regular or gluten-free 2 tablespoons olive oil 1/2 cup diced yellow onion 1 green peppers diced 1 cup cleaned and sliced kale 1 teaspoon herb and garlic seasoning 1 teaspoon chili seasoning 12 oz beer 14 oz can diced tomatoes 1 tablespoon honey 1 tablespoon tapioca flour or cornstarch, whisked with 1 tablespoon of water 4 slices cooked and crumbled bacon
Lightly coat chicken in flour
Heat olive oil in skillet or multi-cooker
Add chicken and cook for 3-4 minutes on each side until lightly browned and crispy
Transfer to slow cooker
Add all remaining ingredients except bacon
Cover and cook on high for 2-3 hours or low for 6-8 until chicken is cooked through
Serve chicken over steam rice and topped with bacon
Use boneless chicken breasts or tenderloins
Cook on high to braise, but also works well on low
Pumpkin beer or a stout beer works well
