Freezer Meal Sweet Potato Chili

This healthy chili is one you’ll want to make up in batches and keep on hand all winter long! Freezer Meal Sweet Potato Chili is sweet, spicy and delicious and so simple to make.

Ingredients

  • 2 oz diced red onion minced
  • 1 teaspoon jarred minced garlic
  • 2 jalapeno peppers ribs and seeds removed, diced
  • 1 pound sweet potatoes peeled and diced into bite sized pieces
  • 14 oz can black beans drained and rinsed
  • 2 teaspoons ancho chili powder
  • 2 teaspoons chili powder
  • 1/4 teaspoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 14 oz fire-roasted diced tomatoes
  • 28 oz crushed fire-roasted tomatoes
  • 1 cup chicken broth or sub vegetable broth

Instructions

  • Add all ingredients to freezer bag and shake to combine.
  • Remove air and seal
  • Freeze for up to 3 months
  • Thaw overnight in fridge before cooking
  • Add thawed ingredients to slow cooker and cook on high for 3-4 hour or low for 6-8 until potatoes tender

Notes

  • Can reduce or eliminate chipotle powder to make less spicy
  • Add other veggies if desired (bell peppers would be delicious)
