Ingredients

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 1 cup frozen corn kernels
  • 15 oz can fire roasted diced tomatoes
  • 8 oz tomato sauce
  • 1 tablespoon homemade taco seasoning
  • 8 oz cream cheese room temperature (dairy free)
  • 4-8 oz shredded sharp cheddar cheese dairy free

Instructions

  • Brown ground beef in skillet and drain any excess grease
  • Add all ingredients to a small (approximately 2 quart) slow cooker
  • Heat until melted, stirring occasionally, about 1-2 hours on high for 2-4 on low

Notes

  • Use regular or dairy-free cheese
  • Add chopped fresh jalapeño or bell pepper if desired 
  • Garnish with fresh chopped cilantro if desired
