1 pound ground beef 1/2 cup diced onion 1 cup frozen corn kernels 15 oz can fire roasted diced tomatoes 8 oz tomato sauce 1 tablespoon homemade taco seasoning 8 oz cream cheese room temperature (dairy free) 4-8 oz shredded sharp cheddar cheese dairy free
Brown ground beef in skillet and drain any excess grease
Add all ingredients to a small (approximately 2 quart) slow cooker
Heat until melted, stirring occasionally, about 1-2 hours on high for 2-4 on low
Use regular or dairy-free cheese
Add chopped fresh jalapeño or bell pepper if desired
Garnish with fresh chopped cilantro if desired
