Easy Baked Buffalo Chicken Mac and Cheese

- 12 ounces Horizon Classic Mac (2 boxes)
- 1/2 cup milk
- 6 tablespoons butter (2 of which should be melted)
- 1 1/2 cups shredded rotisserie chicken (or leftover cooked chicken)
- 1/2 cup thinly sliced carrots
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup plain bread crumbs
- 3 tablespoons bottled ranch dressing
- 3 tablespoons buffalo wing sauce
Preheat oven to 425 degrees and spray 1 1/2 quart casserole dish with non-stick spray
Cook macaroni according to package directions
Drain and return to pan
Mix in 4 tablespoons butter and 1/2 cup milk stirring until smooth
Mix in carrots and chicken until evenly combined
Place in casserole dish
Sprinkle evenly with shredded cheese and then bread crumbs
Drizzle with 2 tablespoons of melted butter
Place in oven and cook for 10-12 minutes until top is lightly browned and crispy
Remove from oven and drizzle with desired amount of ranch and buffalo sauce
