Easy Baked Buffalo Chicken Mac and Cheese

Ingredients

  • 12 ounces Horizon Classic Mac (2 boxes)
  • 1/2 cup milk
  • 6 tablespoons butter (2 of which should be melted)
  • 1 1/2 cups shredded rotisserie chicken (or leftover cooked chicken)
  • 1/2 cup thinly sliced carrots
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup plain bread crumbs
  • 3 tablespoons bottled ranch dressing
  • 3 tablespoons buffalo wing sauce

Instructions

  1. Preheat oven to 425 degrees and spray 1 1/2 quart casserole dish with non-stick spray
  2. Cook macaroni according to package directions
  3. Drain and return to pan
  4. Mix in 4 tablespoons butter and 1/2 cup milk stirring until smooth
  5. Mix in carrots and chicken until evenly combined
  6. Place in casserole dish
  7. Sprinkle evenly with shredded cheese and then bread crumbs
  8. Drizzle with 2 tablespoons of melted butter
  9. Place in oven and cook for 10-12 minutes until top is lightly browned and crispy
  10. Remove from oven and drizzle with desired amount of ranch and buffalo sauce
