Tomato Basil and Goat Cheese Pasta

Ingredients

  • 10 oz linguine pasta
  • 8 oz grape tomatoes halved
  • 6 large basil leaves slivered
  • 1/2 cup crumbled goat cheese (or more to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions

  • Boil noodles according to package directions (al dente)
  • Drain and toss immediately with olive oil and lemon juice
  • Let cool slightly (3-5 minutes) then toss in tomatoes, basil and goat cheese
  • Add salt and pepper to taste and serve
