Ingredients

  • 3 pounds sweet potatoes
  • 1 tablespoon butter
  • ½ - 1 teaspoon salt
  • 1/4 cup sour cream

Instructions

  • Peel sweet potatoes and cut into large chunks.
  • Next, place potatoes in slow cooker and cover with water.
  • Cover slow cooker and cook on high for 3-4 hours or low for 6-8 hours until potatoes are fork-tender.
  • Drain excess water from the slow cooker.
  • Add in butter, salt, and a small amount of sour cream.
  • Blend potatoes with a hand mixer or potato masher and slowly add the rest of the sour cream. Keep mixing until potatoes reach your desired consistency.
  • Add additional salt if needed and serve!

Notes

  • Store in the refrigerator for up to 3 days. Reheat in the microwave.
  • Be sure to drain potatoes very well before mashing to ensure the right consistency.
  • Season with additional herbs and spices to your liking. Garnish with chopped parsley if desired.
