Ingredients

  • 1 pound boneless skinless chicken thighs cut into chunks
  • 1 pound small red potatoes quartered
  • 4 oz portobello mushrooms
  • 1 zucchini cut into large chunks
  • 6-8 pearl onions peeled (or 1 small onion cut into chunks)
  • 4 cloves garlic peeled and smashed
  • 1 lemon quartered
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon Italian seasoning
  • 3 sprigs fresh rosemary

Instructions

  • Place all ingredients in crock with fresh rosemary on top
  • Cover and cook on high for 4 hours or low for 6-8 until chicken is cooked through and veggies are tender
