  • 2 cups frozen sweet corn thawed
  • 1 can black beans drained and rinsed
  • 1/4 cup red onion diced
  • 1 cup grape tomatoes sliced
  • 1/2 jalapeno seeded and diced
  • 1 avocado diced
  • 1 teaspoon dried cilantro
  • Fresh lime juice from 1/2 lime

Instructions

  • Add all ingredients to a large bowl and toss
  • Cover tightly and refrigerate until ready to serve (if not serving immediately, wait to add avocado)
