What is a stuffed sweet potato? 

A stuffed sweet potato is a cooked potato that is typically split down the middle and filled with all sorts of yummy toppings. These toppings can be as light or hearty as you like! 

Here are a few extra reasons to love stuffed sweet potatoes:

  • Sweet potatoes are a healthy superfood and swapping them out for other carbs can bring added vitamins, fiber, and antioxidants to your meals.
  • It’s so easy to prep sweet potatoes ahead of time in the slow cooker along with a big batch of whatever meat you prefer. We love to create a big batch of slow cooker buffalo chicken and use it to top off different meals throughout the week. This is my favorite way to eat the two options!
  • Sweet potatoes are easy to store at home for up to a couple of weeks at a time. For those nights when you don’t know what to make, you can always have a healthy meal base on hand.
  • Stuffed sweet potatoes can make a complete meal when topped with a protein source and your favorite cheese, salsa, or dressing. Get creative and make a spread of toppings from your fridge!

Ingredients Needed

This recipe is a “mashup” at its finest! Combine two slow cooker recipes by making one or both ahead of time. Warm up and add additional toppings to make the tastiest blue-cheese-buffalo-chicken-ranch combo!

You’ll need:

  • Sweet potatoes – Use 4 medium slow cooker sweet potatoes or two large potatoes. An oval or casserole slow cooker works best for larger potatoes, but you can also slightly trim the ends to make them fit. My slow cooker sweet potato recipe has lots of ideas for tasty spice rub combinations if you like!
  • Buffalo chicken – Prep this ahead to store in the fridge or serve it warm from the slow cooker. My slow cooker buffalo chicken recipe is the easiest “toss and go” mix and it’s so flavorful you’ll want to make extra for lots of meal options!
  • Blue cheese crumbles – Blue cheese and buffalo sauce are such a delicious pairing. Get some crumbly blue cheese to sprinkle across the 1/2 cup blue cheese crumbles. Most varieties are gluten-free already, but check the label just to be safe if you need to ensure a gluten-free option.
  • Avocado ranch dressing – This dressing combination is available from so many great brands! Choose your favorite option.
  • Chopped green onions – Green onions add the best hint of spicy-flavor!

How To Make Stuffed Sweet Potatoes Using The Slow Cooker 

Before you assemble these stuffed sweet potatoes, complete a few steps of prep. Decide how you’d like to cook the sweet potatoes, whether using the slow cooker or Instant Pot Sweet Potatoes – both great, easy options! If you use the slow cooker, here’s a quick rundown of the steps:

  • Lightly scrub and pierce the potatoes to allow steam to release while cooking
  • Rub the sweet potatoes with a little olive oil and seasonings of your choice (optional, but oh-so-good)
  • Add a little water to the bottom of the slow cooker
  • Cover the slow cooker and let the potatoes slow cook until fork-tender (usually about 6 hours on low or 3 hours on high)

Also, cook the buffalo chicken ahead of time – or have it ready to serve hot in the slow cooker. It would also be so easy to store premade buffalo chicken in single-serving portions in the freezer for the days you need to add to your meals.

Now, you’re ready to assemble the stuffed sweet potatoes! Combine your two slow cooker recipes and have a fantastic plate ready with very minimal effort.

  1. Slice the cooked sweet potatoes lengthwise and carefully break apart some of the potato flesh.
  2. Top each potato with warm shredded buffalo chicken, about 1 tablespoon of avocado ranch dressing, blue cheese crumbles, and a sprinkle of green onions.

*With 4 medium potatoes, this makes 4 average-sized servings. With two large potatoes, you could serve one-half of each potato and top it off lengthwise.

What To Serve With Stuffed Sweet Potatoes

Since stuffed sweet potatoes are such a hearty combination, some light and fresh options on the side can round out the meal! Slice up some celery or carrot sticks and serve with an extra side of ranch.

Storing and Reheating 

It can’t be understated how convenient it is to prep the recipe elements in advance and have an easy-to-assemble meal ready to go for later!

Store cooked sweet potatoes and cooked buffalo chicken separately in the fridge for up to 3 days. Store all toppings in separate containers as well, and reheat servings individually when ready to eat.

Freeze leftover buffalo chicken for up to 3 months in airtight containers or sealed bags. If you wish to freeze the sweet potatoes, I recommend removing the skins first and freezing only the potato flesh. 

Defrost, and reheat the potatoes in the microwave or stove. Mash them up and add toppings!

  • Can you eat sweet potato skin? Yes, you can eat sweet potato skin and it is actually a source of added fiber and other nutrients. This is really up to your preference and possibly the quality of the potato you have. If you prefer to peel the potatoes, the skins are easy to remove once cooked.
  • Does the sweet potato need to be wrapped when cooking in the slow cooker? You do not have to wrap the sweet potatoes in foil. This is also a matter of preference as some like the added moisture from the steam that is trapped in the foil. Following the cooking time for my slow cooker sweet potatoes, there shouldn’t be any issues with the potatoes drying out.
  • Can the sweet potato be made ahead of time? Yes, and this is one of the reasons I love this recipe! Make them a few hours or a day or so ahead of time. Reheat in the microwave when ready to assemble and serve.
  • Can you bake sweet potatoes in the oven? You can also bake sweet potatoes in the oven! Preheat the oven to 400 ℉, pierce the potatoes with a fork a few times, and bake between 30-45 minutes depending on the size. Potato skin should be slightly crispy and the inside should be fork-tender when done.
