Everyone needs an easy to throw together, totally homemade snack that is simple but oh-so-amazingly delicious. This one is packed with cheese, peppers, shallots, garlic and half and half and cooks in just a couple of hour in your slow cooker. Perfect for game night, last minute entertaining or even just a dinner every now and then! Slow Cooker Spicy Queso is the the appetizer for any occasion!

 

Whole garlic, pepper and shallotStart with your simple fresh veggies!! Peel the garlic and shallot and remove ribs and seeds from the peppers.

To make it super simple just toss them right into your mini chopper so you never have to get the hot pepper juice on your hands! Have you ever done that and then forgot and touched your face? Ouch!!!

Add your finely chopped veggies to the slow cooker and shred up your cheese from the block (no pre-shredded, it won’t melt as well) and add remaining ingredients. My favorite gadget for shredding up a block of cheese in only a few seconds? A salad shooter!

Crank it up to high, cover and let it all start to melt. Stir every 20-30 minutes or so for a couple hours until totally melted. Add more half and half or some milk if it ends up too thick.

Ingredients
  

  • 1 jalapeno pepper
  • 1/2 poblano pepper
  • 1 shallot
  • 2 garlic cloves
  • 8 oz sharp cheddar
  • 4 oz gouda
  • 4 oz cubed cream cheese
  • 1 tablespoons cornstarch
  • 1 1/2 cups half and half

Instructions
 

  • Remove ribs and seeds from peppers
  • Peel shallot and garlic
  • Add all to mini chopper or finely chop using knife
  • Shred cheddar and gouda cheese and add to slow cooker along with cream cheese
  • Mix cornstarch with one tablespoon water and add to slow cooker
  • Add half and half
  • Cover and cook on high for about 2 hours, stirring every 20-30 minutes or so until fully melted and warm
  • Serve with chips or as desired
