This one is so meaty, hearty, rich and filling it will satisfy the soup lovers and the meat lovers and even the pasta lovers alike! That, and it’s so simple to make that the cook of the family will probably love it the most!

In fact, this may just be one of the the simplest recipes you will make all week! And simple does not have to = boring. In fact, we are taking this soup up a notch my using some spicy marinara sauce to give it just a little bit of kick. Everyone will wonder how you had time to make such an amazing dinner!!

Let this slow cook all day and come home to a house filled with the smell of tomatoes and broth and hearty beef. And who won’t love the addition of the cheese filled tortellini noodles?! Seriously a meal that will please all.

Ingredients
  

  • 1 pound beef stew meat
  • 2 cups spicy marinara or spaghetti sauce
  • 3 cups vegetable broth
  • 2 14.5oz cans fire-roasted diced tomatoes (or regular diced tomatoes if preferred)
  • 1 teaspoon Italian seasoning
  • 8 oz dried tortellini pasta noodles
  • 2 tablespoons heavy cream optional
  • grated parmesan cheese for serving optional

Instructions
 

  • Add stew meat, spaghetti sauce, broth, diced tomatoes and Italian seasoning to slow cooker
  • Cover and cook on low for 7 - 9 hours
  • Remove lid and stir (you can also break up any larger chunks of stew meat if desired)
  • Add tortellini pasta and turn slow cooker to high, let cook for 20-30 minutes or until pasta is tender
  • To cut the acidity a bit you can stir in one to two tablespoons of cream, this is optional but does help the flavors work together nicely
  • Serve garnished with grated parmesan cheese or as desired

Notes

I cooked this on low in my 4 quart multi cooker for 8 hours then on high for about 20 minutes to cook pasta

    I tried this and it was so good. We didn’t have spicy marinara sauce or fire roasted tomatoes so i just added 1-2 tbs chilli flakes. I personally don’t think the cream made much difference. I cooked it on the stovetop for 45 minutes and had it with rice instead of pasta. This was so simple and easy (I did nothing but measure) and it turned out so delicious !! It’s definitely one of those recipes I’m reserving for when I’m sick or need a pick me up.Thank you!

    1. Hi Bonnie! Yes, that should be fine. Just keep an eye it so that you can adjust the cooking time. My guess would be frozen will take about the same amount of time as dried, and fresh will be quicker. Let me know how it turns out!!

  4. I own a slow cooker, but really 8-9 hours waiting for dinner. Not everyone is out all day to business. I have a couple of very heavy ceramic/porcelean pots and love them on top of the stove. I think every time a recipe is posted for a slow cooker, it should also have the required hours for skillet stove top one pot wonders. Does anyone know of the length of time this recipe needs to be converted to stop top. Thanks. The recipe sounds good, but can’t rate it until I cook it.

      REALLY, There are a ton of sites that give you a conversion chart, how about getting the information with a little searching on your part. The recipe clearly states that it is a SLOW COOKER RECIPE.

  5. Both my husband and I are meat lovers. Going to try this soon! Would you recommend this as a “freezer meal”?

    1. Hi Bonnie! You guys will love this! Yes, you could totally put the meat, spaghetti sauce, tomatoes and seasonings in a freezer bag. Remove the air and seal it up. Thaw it out, add it to the slow cooker with the broth and follow the rest of the instructions from there. Let me know if you do this!
